Hydrolysis of Carbohydrates Experiment Answer

Describe the effect of Test Tube #8 after heating it and letting it cool down. Provide an explanation for this observation.

In test tube number 8, iodine test resulted positive upon dropping the iodine reagent because iodine is trapped in the natural helix of starch and thereby producing a dark blue color. Upon heating, the iodine test seems to yield a negative result since the natural helix of starch is destroyed and so it cannot help the iodine produce the dark blue color. Upon cooling down, starch regains its helix and so the dark blue color is regained.
